The bacteria used in the fermentation process also produce carbon dioxide in its products, resulting in bubbles in the cheese matrix.<\/p>\n<p>Therefore the size and number of bubbles that different cheeses have depends on the amount of carbon dioxide and the elasticity of the matrix where the cheese is made.<\/p>\n<p>But be careful! This applies ONLY to yellow cheeses and not to our favorite FETA!<\/p>\n<p>In feta, holes are created naturally when placing the curd cubes in the mold or bag.
