{"id":7865,"date":"2019-09-27T23:00:00","date_gmt":"2019-09-27T23:00:00","guid":{"rendered":"https:\/\/arvanitis.gr\/the-dna-of-feta-pdo-cheese-finally-decoded\/"},"modified":"2019-09-27T23:00:00","modified_gmt":"2019-09-27T23:00:00","slug":"the-dna-of-feta-pdo-cheese-finally-decoded","status":"publish","type":"post","link":"https:\/\/arvanitis.gr\/en\/the-dna-of-feta-pdo-cheese-finally-decoded\/","title":{"rendered":"The DNA of Feta PDO cheese finally decoded"},"content":{"rendered":"<p>Researchers at the Academy of Medicines Biomedical Research Institute (IBSEA) analyzed the Greek Feta, decrypting for the first time on molecular level its content, its value and its nutritional properties, as the Athenian Agency reports.<\/p>\n<p>HIGH RESOLUTION ANALYSIS<\/p>\n<p>Researchers at IBSEA, Dr. George Tsagaris and Dr. Athanassios Anagnostopoulos, who published in an international journal, analyzed with high-resolution mass spectrometers a variety of representative samples from all regions of Greece which produce Feta PDO, seeking identification of all proteins and peptides they contain.<\/p>\n<p>FOP PDO: Contains 489 Different Proteins<\/p>\n<p>It has been found that the Greek Feta PDO cheese contains a total of 489 different proteins, making it one of the worlds most protein-rich cheeses. These 489 proteins are the identity of Greek Feta and belong to various groups of bioactive proteins. Among other things, proteins, related to immune system regulation, with antimicrobial activity, as well as proteins that control the microbial of the intestine are included.<\/p>\n<p>PROTEINS RELATED TO VITAMINS<\/p>\n<p>Several vitamins-related proteins, such as D, responsible for bone calcium transport, vitamin B12, responsible for the transport and intake of iron, as well as other functional trace elements, have also been identified.
