Ingredients

  • 4 fresh peppers
  • 2 slices of Kafalotiri
  • 2-3 tsp. flour oil for frying
  • For the sauce:
  • 1 tsp dried rosemary, crushed
  • 120 ml olive oil
  • 2 tablespoons balsamic vinegar
  • 1 Tbsp soft mustard
  • 1 tsp honey

Directions

Place oil into a multil, vinegar , mustard , honey and rosemary and whisk until become a smooth sauce.

Wash the peppers , cut them in half lengthwise , remove the stem and seeds and bake as is plain in a preheated grill for 8 minutes on one side and 6 minutes on the other or in the oven.

Place them as hot in a bowl , cover with the clear film and leave for 15 minutes. In this manner softens the skin and then peeled off very easily. After the peel , cut into small thin strips ,add the salt and pepper and place them on a platter.

Place in a bowl of water and a plate of flour. In a pan add olive oil as well as to cover the bottom of the pan and place over high heat .

Dip Kefalotiri in water , then in flour, shake to leave excess flour , submerge in water again and put it immediately on the hot oil but carefully , because it will splatter.

Fry until become golden brown on both sides for a few minutes and leave to drain on kitchen paper.

Repeat the process with the second slice of cheese.

Put it on the platter with fried peppers and , if desired, drizzle with sauce , or put it in a bowl to dip bites of cheese and pepper.
