Shrimp saganaki with Barrel aged Feta

Ingredients

  • 500g peeled shrimp
  • 200g Barrel aged Feta ARVANITI
  • 400g crushed tomatoes (or concassé)
  • 1 small onion, finely chopped
  • 2 garlic cloves
  • 60 ml olive oil
  • 50 ml white wine
  • 1 tsp sugar
  • Freshly ground black pepper
  • Chili flakes (optional)
  • Fresh parsley

Directions

  1. Heat the olive oil in a pan and sauté the onion until soft.
  2. Add the garlic and cook for 1 minute.
  3. Deglaze with the white wine and let it evaporate.
  4. Add the tomatoes, sugar, pepper, and chili flakes.
  5. Simmer for 10–15 minutes until the sauce thickens.
  6. Add the shrimp and cook for 3–4 minutes.
  7. Crumble the Barrel aged Feta ARVANITI over the top.
  8. Let it melt slightly for 2–3 minutes, then remove from heat.
  9. Serve with fresh parsley.
