Traditional Greek prasopita with Goat cheese

Ingredients

  • (for a 36 cm baking dish)
  • Filling:
  • – 1 kg leeks (white part only), thinly sliced
  • – 2-3 spring onions (optional), finely chopped
  • – 3-4 tbsp. olive oil
  • – 300 g. Arvanitis goat cheese, crumbled
  • – 2 eggs
  • – Pepper (optionally a little nutmeg)
  • – 1/2 bunch of dill or fennel (optional)
  • – 1 package of ready-made village phyllo (usually has 6 sheets – you will need 3 for the bottom, 3 for the top)
  • – Olive oil for the sheets and the baking dish

Directions

Sauté the leeks and spring onions in the olive oil in a large frying pan until soft (but not browned) – about 10-12 minutes.

– Remove from heat and let cool.

– Add the eggs, crumbled goat cheese, pepper (and dill if you like). Mix well.

– Preheat the oven to 180°C air or 190°C resistance.

– Grease the baking sheet well.

– Lay out 3 sheets for the base, greasing each one.

– Pour in the filling and spread it evenly.

– Cover with the other 3 sheets, greasing in between.

– Fold the edges inward.

– Lightly score the pie into pieces with a knife.

– Drizzle the surface with a little olive oil or brush with egg for a crispier result.

– Bake for 50-60 minutes, until well browned and crispy.
