Spinach pie with Tsantila Goat Cheese

Ingredients

  • FOR THE PASTRY LEAF:
  • 1/2 kilo of flour for all uses
  • 2 tablespoons olive oil
  • 1 Tbsp vinegar
  • 2 tsp salt
  • 1 cup lukewarm water
  • For the filling:
  • 1/2 pound spinach blanched slightly
  • 1/2 pound Tsantila goat cheese ARVANITI
  • 3 eggs
  • 1 Tbsp olive oil
  • dill
  • salt and pepper

Directions

Place in a bowl all the ingredients for the pastry leaf and knead well until this mixture make a pliable dough. Add more flour if needed.

Leave the dough aside to rest.

For the filling , add all the ingredients together in a bowl and mix well .

With a rolling pin roll out the pastry leaf to be thin – make 6 of them.

After lubricate a round baking pan , lay 3 pastry leaves. Then pour the filling and close over the last 3 pastry leaves left .

Preheat oven to 180 degrees of Celsius and bake for about 1 hour .

TIPS

– Every time you lay a pastry leaf Grease well .

– Before you put the pie in the oven ,we carve and sprinkle it with a little bit of oil and water .
