PANTELIS TRAPTSIOS

The bulk of domestic production of sheeps and cows milk is produced in Central Macedonia.

The local farmer Pantelis Traptsios retains for 20 years the corral in Pentalofos, Thessaloniki located only 5 km away from Fromagerie ARVANITI.

His goats belong to the breed capra prisca (Greek pastoral goat) while overall the unit has about 500 sheep, regularly inspected by the Pentalofos Veterinary Services.

The milk produced by Pantelis has high quality characteristics, because animals freely graze at the semi-mountain area, in short distance from the unit.

Every morning, at around 8:00, he starts milking by hand and at 10:00-11:00 starts for the mountain. About two kilometers from the barn is the source where the animals stop for drinking water and then continue to the church of St. Raphael. There, they graze all day agriapidia and mint, which are the main plants of the local flora. At 19:00 In the afternoon, he returns for the second milking.

Pantelis daily milks his goats and sheep twice a day for 365 days a year, to offer fresh milk as raw material for the production of traditional ARVANITI cheeses. The annual milk production is 30 tons, while the productivity culminates in May with about 300 pounds of milk per day.

The work of Pantelis is difficult and painful, but is rewarded by the result. His 16- year- old son Dimitri, who already helps him with grazing herd and milking, has learned many of the secrets of traditional farming while his eldest son, George, works in Fromagerie ARVANITI.

Pantelis provides work for two more persons for the needs of his livestock unit.
