Nikos Vezirgiannis is a third generation breeder, born of a traditional Thracian breeders family. His livestock unit was built in 2002 in the area of Kato Scholari, Thessaloniki, just 15 minutes from our Fromagerie.
Today, Nikos breeds 200 sheep mainly from Chios and mixed race. The demanding work required is done all by himself, with the passion, patience and love for his animals.
Healthy living conditions are regularly checked by the Veterinarian of Vassilika which is responsible for brucellosis and vaccinations.
The grazing of the animals takes place in the summer from 8am to 3 at the rich in low vegetation area of Petra and the Old stadium, where local plants such as slivers, kazotos, gourd, hazilla, vikos and oats grow.
The sheep are milked twice a day at 8am and at 8pm for two hours at the 12-seaters mechanical mast. Milking takes place from October to January (winter period) and from March to June (summer period).
On an annual basis, the milk produced by Nikos unit is 30 tons. April is usually the best month in yield (~ 7 tonnes of milk) because of the ideal weather conditions.
